Thrifty Sweet Loaf

This is one of those weird things I’ve found on my meanderings through old cookbooks. I massaged the ingredients for 2020, and then subjected the neighbours to a trial without telling them that it actually a Tomato Soup Loaf! Great for lunchtins.

Bake Time: 1hr

Serves: 12


1.5 cups of condensed tomato soup

1 teaspoon baking powder

1 cup sugar (I used brown)

1 egg

75g butter

Half a teaspoon of salt

1 teaspoon cinnamon

2 teaspoon mixed spice

1.5 cups of self-raising flour

1 cup sultanas (raisins are fine too)


You will need a medium-sized cake tin or large loaf tin, sprayed or, buttered and floured. Set your oven to 180 oC (160 oC if fan forced.)

  1. Cream the sugar, butter, egg, cinnamon, mixeed spice and salt.
  2. Add the tomato soup and mix.
  3. Add the flour and baking soda.
  4. Add the sultanas.

Bake for 1hr in the center of the oven, check with a cake skewer, or toothpick to ensure it is baked through. Leave to cool thoroughly in the tin…enjoy.
