Easy Muesli Muffins

Try this super easy and healthy muffin recipe, they’re great for a healthy snack or for lunch boxes.

  • Serves: 24 Muffins


3 cups Flour

2 cups Brown Sugar

2 teaspoons Baking Powder

1 teaspoon Baking Soda

2 Eggs lightly beaten

¾ cup Milk

2 teaspoons Vanilla extract

1 cup Butter, melted and cooled

1 cup Bananas mashed

1 cup Granpa BB’s Muesli

1 cup Walnuts / Almonds / Macadamias chopped

1 cup Dessicated coconut


You’re going to need two muffin trays lined with paper baking cups or liberally greased. Set your oven to 180 oC (160 oC if fan forced.)

  1. In a bowl mix together the flour, sugar, baking powder, baking soda.
  2. Mix together the cooled, melted butter with the lightly beaten eggs, milk and vanilla and add to the dry ingredients. Mix on low speed until combined.
  3. Add the mashed bananas, Granpa BB’s Muesli, nuts, and desiccated coconut. Mix until combined, don’t overmix!
  4. Place spoonfuls of the mixture into the prepared muffin trays and bake for 25 – 30 minutes. Test with a toothpick to ensure the muffins are cooked through. Allow to cool in the tray before storing in a closed container.

These muffins will keep for a week and freeze well.

Pro Tip: If you put a frozen muffin in a lunch box in summer, it keeps everything else cool and it is ready to eat by morning tea!
