3 cups Flour
2 cups Brown Sugar
2 teaspoons Baking Powder
1 teaspoon Baking Soda
2 Eggs lightly beaten
¾ cup Milk
2 teaspoons Vanilla extract
1 cup Butter, melted and cooled
1 cup Bananas mashed
1 cup Granpa BB’s Muesli
1 cup Walnuts / Almonds / Macadamias chopped
1 cup Dessicated coconut
You’re going to need two muffin trays lined with paper baking cups or liberally greased. Set your oven to 180 oC (160 oC if fan forced.)
- In a bowl mix together the flour, sugar, baking powder, baking soda.
- Mix together the cooled, melted butter with the lightly beaten eggs, milk and vanilla and add to the dry ingredients. Mix on low speed until combined.
- Add the mashed bananas, Granpa BB’s Muesli, nuts, and desiccated coconut. Mix until combined, don’t overmix!
- Place spoonfuls of the mixture into the prepared muffin trays and bake for 25 – 30 minutes. Test with a toothpick to ensure the muffins are cooked through. Allow to cool in the tray before storing in a closed container.
These muffins will keep for a week and freeze well.
Pro Tip: If you put a frozen muffin in a lunch box in summer, it keeps everything else cool and it is ready to eat by morning tea!
